Pumpkin Oat Bites with Spiced Maple Glaze

For the Pumpkin Oat Bites
- 1 cup oat flour
- 1 cup quick oats (or Old Fashioned oats - see note)
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 pinch salt
- 1 cup canned pumpkin puree
- ¼ cup canola oil
- ⅓ cup pure maple syrup
- 1 teaspoon pure vanilla extract
- ½ cup butterscotch baking morsels
For the Spiced Maple Glaze
- ½ cup powdered sugar
- 2 Tablespoons pure maple syrup
- ¼ teaspoon ground cinnamon
- ¼ teaspoon pure vanilla extract
For the Pumpkin Oat Bites
Preheat oven to 350°F. Combine dry ingredients (oat flour, oats, baking soda, spices, salt) in a large mixing bowl and stir to combine.
Add pumpkin puree, oil, maple syrup and vanilla. Stir well to combine.
Add butterscotch morsels and stir to evenly distribute throughout the batter.
Line baking sheet with parchment paper (not waxed paper). Scoop batter using a cookie scoop or tablespoon onto lined baking sheets, placing about 2in apart. Bake for 13-16min, or until edges are slightly golden and bites are set. They will be SOFT!Allow to cool on the sheet pan for 5-10min. Transfer to a wire rack and cool completely.
For the Spiced Maple Glaze
While bites are baking, combine all glaze ingredients in a small mixing bowl. Whisk to combine. Once bites have cooled, drizzle with glaze.
Pumpkin Oat Bites will keep for 3-4 days in an air-tight container or baggie. Enjoy!
