Pumpkin Oat Bites bring a lot to the table, especially when drizzled with a spiced maple glaze.
And their soft, chewy texture? YUM…they’re almost…fudgy?
(Like, what’s another word for “fudgy”? Because “fudgy” evokes images of chocolate and brownies…
But these are…not…chocolate… The thesaurus has failed me.
Let’s just settle on “delicious”.)

Key Ingredients
- Pumpkin – Make sure you have canned pumpkin and NOT pumpkin pie filling.
- Oat Flour – I used Bob’s Red Mill Gluten Free Oat Flour for these cookies, but I’ve also had success making my own oat flour (See Recipe Notes)
- Quick Oats – If you don’t have Quick Oats, don’t worry. You can swap in Old Fashioned oats as well. You could also pulse Old Fashioned oats in your food processor to “chop” them up a bit, and use that.
The Process
Gather your ingredients and then it’s as simple as:

Pumpkin Oat Bites are technically gluten free…however….
Oats are one of those products where gluten cross contamination could occur during processing, so many brands have developed dedicated gluten free facilities to avoid this problem.
If this is a dietary concern for you, please double check your ingredient labels.
Pumpkin Oat Bites with Spiced Maple Glaze
Ingredients
For the Pumpkin Oat Bites
- 1 cup oat flour
- 1 cup quick oats (or Old Fashioned oats – see note)
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 pinch salt
- 1 cup canned pumpkin puree
- ¼ cup canola oil
- ⅓ cup pure maple syrup
- 1 teaspoon pure vanilla extract
- ½ cup butterscotch baking morsels
For the Spiced Maple Glaze
- ½ cup powdered sugar
- 2 Tablespoons pure maple syrup
- ¼ teaspoon ground cinnamon
- ¼ teaspoon pure vanilla extract
Instructions
For the Pumpkin Oat Bites
- Preheat oven to 350°F. Combine dry ingredients (oat flour, oats, baking soda, spices, salt) in a large mixing bowl and stir to combine.
- Add pumpkin puree, oil, maple syrup and vanilla. Stir well to combine.
- Add butterscotch morsels and stir to evenly distribute throughout the batter.
- Line baking sheet with parchment paper (not waxed paper). Scoop batter using a cookie scoop or tablespoon onto lined baking sheets, placing about 2in apart.
- Bake for 13-16min, or until edges are slightly golden and bites are set. They will be SOFT!Allow to cool on the sheet pan for 5-10min. Transfer to a wire rack and cool completely.
For the Spiced Maple Glaze
- While bites are baking, combine all glaze ingredients in a small mixing bowl. Whisk to combine. Once bites have cooled, drizzle with glaze.
- Pumpkin Oat Bites will keep for 3-4 days in an air-tight container or baggie. Enjoy!
Recipe Notes:
- Do NOT use steel-cut oats. This recipe only works with old-fashioned or quick oats.
- Don’t have oat flour? Can’t find any? Make your own! Place 1 cup of old-fashioned or quick oats in a food processor or blender and process until you have a fine (ish) powder.
- How long will this recipe keep? Pumpkin Oat Bites will keep well in an airtight baggie or container for 3-4 days. You may notice the bites absorb the glaze, but they’ll still taste great.
- Can I use a fresh pumpkin puree? So…maybe. You’d need to make sure the fresh puree had a similar consistency to canned pumpkin puree… You don’t want to add too much moisture to this recipe and end up with a soggy mess.
- Are these considered “Whole Grain”? Yep! Oats = Whole Grain. Between the oats, pumpkin and spices, Pumpkin Oat Bites are packed full of all sorts of nutritious goodies.
- Is this recipe Gluten Free? It can be! For ingredients such as butterscotch chips and pumpkin, check ingredient labels for anything that contains gluten. For the oat/oat flour, make sure they are labeled as “gluten free”.
