Fluffy Vanilla Blender Waffles are light and sweet, and SO easy to make – just pop everything in your blender, and go!
Why put cottage cheese in waffles? Well, it all started this past summer. Picture it, the year is 2020…
(Yes, that’s a Golden Girls’ reference….stay with me)
I have been ordering my groceries online and picking things up via curbside pickup. And as a result of the curbside pickup life, I get the occasional substitution item. Cool! Fine! Whatever, I’ll make it work. In the grand scheme of things, it is not that big of a deal, right?
Enter, stage right: The full-fat cottage cheese, sitting in my fridge.
I’m VERY picky about my cottage cheese. I only like fat-free. It’s a texture thing.
But the kindly shopper didn’t find the fat-free cottage cheese, or the store was out, or whatever, and I got subbed. Again – cool. Fine. Whatever. Not a big deal.
I tried a bite and nearly gagged. So, what else can I do it?
I had recipes for muffins, baked pasta dishes and smoothies, but I was feeling the creative itch. I found several recipes for waffles using cottage cheese, and after combing through them, I came up with my own version.
Key Ingredients
The main players in Cottage Cheese Waffles are:
- Cottage Cheese – You can use full-fat, reduced-fat or fat-free cottage cheese in this recipe, but keep in mind the higher fat content will yield a slightly more tender crumb.
- Flour – I use all-purpose flour in this recipe as it yields a lighter end product. You can technically use whole wheat flour but keep in mind it may result in a heavier, more dense waffle.
The Process
This recipe is STUPID EASY.
It’s a “Before Coffee” recipe. (As in, it’s so easy to follow you can make it before your morning coffee…#coffeeaddict)
You literally throw everything into a blender. Turn it on. Pour the batter in a preheated waffle iron and cook. Enjoy. Grab that coffee. Make someone else do the dishes. VOILA.
Side Note: There is much derision in our household regarding the perfect waffle. The Hubs likes light and crispy waffles, whereas I prefer mine to be dense. He likes a stronger vanilla flavor, I like mine a little less sweet.
Even with our differences in waffle preference, these ticked all the boxed. They crisp up nicely but not too much, they’re slightly sweet, and they have a delicious vanilla scent. Easy to make and they disappear as fast as you can them? Check and check.
Fluffy Blender Waffles
Ingredients
- 1 cup cottage cheese undrained
- 6 eggs large
- ¼ cup canola oil
- 1 tsp vanilla extract
- ½ cup all-purpose flour
- ¼ tsp salt
- Melted Butter
- Maple Syrup
Instructions
- In a blender, combine cottage cheese, eggs, oil and vanilla. Cover and process until well blended.
- Add flour and salt; process until smooth, but do not overmix.
- Cook batter in a preheated waffle iron according to manufacturer's directions, until golden brown.
- Serve with melted butter and maple syrup.
Recipe Notes
- Can I prepare the batter ahead of time? I’ve made this batter the night before and had perfect results. Just make sure you store the batter covered, in the fridge.
- How long will these blender waffles keep once I’ve prepared them? I keep a few of these on-hand in an airtight container for 2-3 days or in the freezer for about 2months (in a freezer bag). To reheat in the oven under the broiler or in a toaster to get them crispy again, or just microwave it.
